HDH is excited to embark on a culinary journey with students and treat their palates to wholesome, thoughtfully crafted foods.  The best part? It's all Rooted in Flavor!

“Rooted in Flavor,” an initiative inspired by Menus of Change, a groundbreaking movement from The Culinary Institute of America and Harvard T.H. Chan School of Public Health that promotes principles of healthy and sustainable menus. By providing nutritious, delicious, and environmentally sustainable food options, HDH aims to show that small choices make a big difference.

Key Goals for 2023-2026

  • 65% of dining purchases are plant-based
  • <10% beef/pork purchases (lbs)
  • >10% seafood dining purchases (lbs)
  • 30% whole grain purchases of all grain purchases (lbs)
  • 30% or more entrees will meet the sodium parameters at each large dining facility
  • We will save more than 20,000,000 Liters of water consumption by increasing alternative dairy usage over dairy in our coffee bars.
